what are you monitoring coolant temp with, Mark? if your not using an accurate method, you can disregard all advice posted here.
the fan won't come on till 210*-212*(factory setting). but i think you can change that with the calum rt/TPRT if you wish.
the car has ALL the proper sensors installed.. it also has a huge mishimoto radiator, new water pump, belts and hoses. that engine should be running super-cool with that big mishi in there.
check the tension on the belts...they may have stretched a little since brand new, but i doubt it. maybe try the fsm style cooling system burp (for an air pocket).
have you messed with the ignition timing? too much advance can cause an engine to detonate and run hotter. but then, that mishi would certainly keep things in check. save any further advice for an answer to my question up top.
