Well, per your guys recommendations I just got this:

I haven't swapped the stuff in yet but here's what I've noticed with the overheating issue. After I've been driving on the highway in 5th gear at around 65-70mph for at least 20 minutes, the temp gauge will start to climb once I exit the highway and sit at a traffic light or something. I did my best to reproduce the conditions although today it was a little cooler than yesterday (100 degrees, WTF) - so I'm going to flush the junk coolant in there now (I believe there is a little drain plug on the passenger side on the bottom of the radiator?) and see if the same thing happens. And yes, the fan does work.

Ok, I put in the distilled water and bottle of water wetter, and so far so good. No overheating, and I ran around town fairly hard and idled for a while here and there, needle stayed in the middle. It was around 90 today.

Simply relying on the stock needle is a fools game.

Going from my after market gauge the stock needle gets to the middle at 50deg and stays there right up to 110deg only above that does the stock needle start to move....

If the stock needle is showing hot... That's real hot.

I run that similar setup except i run a little bit of prestone 50/50. I still have more distilled water and water wetter in my system.
edit: If your car is still overheating after the flush, check your thermostat.

Sam is right about this, i once boiled coolant in an engine with a malfunction thermostat. Gauge barely hit hot, i stopped the car and got out and shit was bubbling out of my reservoir.

Stock needle is fine as long as you know what the temps are based on the position of the needle. To do this, you really need Consult or some other OBD scanner that can read the temp from the digital sensor so you can correlate. Basically if the needle moves above the 60% mark the car is starting to overheat.

Yes, I am working on getting the things required to read the actual temperature. As far as I know the thermostat is new.
