Yes, you can get rid of as much or as little as you want

On my G20 I am still running an idle valve, but don't have any of the cold idle stuff. I've removed most of the sensors on the motor. I have the following:

Throttle position
Coolant temp
Intake Temp
Wideband
Cam angle Sensor
Idle Control Valve
Map Sensor

Needless to say, not much wire left in my car

How do I get a AEM EMS and MAP & IAT setup for ''cheap''? ;D It seems to fit very well in what I'm planning to get for my car.

if you are considering aem ems hold out and wait for the second gen aem ems, from what i have seen it crushes the 1st gen in almost every way, better fuel mapping, ignition mapping, better triggers for starting and idle, just a overall better unit, sure its not cheap, but the changes that are made over gen 1 are worth it.

imo from running the 1st gen aem ems , it has alot of bugs that are fixed with gen 2, so if you were thining about going with aem at all gen 2 is the way otherwise you might deal with some of the isues of gen 1 even if you get it cheap i cant say it would be 100% worth it
