Has anyone done a T-top delete by taking removing t-tops and riveting aluminum sheet in its place? I am thinking of doing that along with some structural reinforcement to eliminate chassis flex.

That doesn't sound like the best solution. I can't think of a good way to do it cleanly. Also what's your final goal for the car? If TT or road racing is in the cards look at the rulebooks now.
Annie Sam's and Dan Gardner's NX's are both T-top conversions. I don't think you can do it well without pulling the windshield, but at the level of work you're looking at, it's really not a big deal.
