GM 1 Bar MAP sensor
I am going to use the GM 1 Bar sensor found on the GTO among other cars, GM Part# 16212460. This is not one of the choices in your list so I went searching for an answer.

I found this table for the GM 1 Bar map sensor.
GM MAP sensor identification information 1 bar 2 bar 3 bar

The table provides
mBar (mbar=kPa*10), at 2V it is 48 kPa or 480 mBar
scalar, as i understand it, is mBar per deltaV, 2v=480 mBar, 1v=290 mBar, 480-290=190 mBar
Voltage, 2V in this example at 480 mBar
So I solved for offset 480=(2*190)+offset, and it gave me 100
Is this correct?

Sounds about right, you can verify it by powering everything on, and checking if it says 1000mbar when you have the engine off at sea level.
