It seems to me that while logging, the values that are shown at the top are representative of the trailing edge of the graph (left hand side). Is there any way to get these values to show what's currently (or near as possible) being logged?

Yes, that is correct.
The values displayed during real time graphing at the top are the trailing edge on the left of the graph (NOT) the current values.

Update released that updates the Log Analyzer window's items in real time now, no longer lagging behind to the last value before it goes off the screen.
I also fixed a little issue which caused the gauge and data screen to read different AFR values under certain circumstances.
