Here is my first crack at it:

MegaSquirt III:

Megasquirt 3 is available as a kit you solder yourself, or prebuilt using surface mount components. There is also the MS3x (extender) which attaches to the ms3 cpu board to add more inputs and outputs. See detailed comparison:

Megasquirt Product Comparison

Megasquirt III with MS3X is intended for DIY install and most installs are self tuned. With Megasquirt you get the opportunity to learn how engine management works and gain full tuneability of your engine. Be sure to read the documentation.

Features (ms3 + ms3x):
8 fuel outputs
8 spark outputs (logic level)
6 relay outputs
2 or 3 wire pwm idle control
SD card datalogging
Support for stock nissan sensors (including DET CAS) as of pre 1.1 beta 19 see changelog: MS3 pre-1.1 beta 19 released
CAN bus support for external driver boards and AIM dash http://www.msextra.com/forums/viewtopic.php?f=131&t=42807

jasonb, thanks for the MSIII info! I'll add it ASAP.
As for FreeEMS, let me get you in contact with the main developer.

I've added MS3 to the list, and I've asked some EMS folks to help contribute first-hand knowledge of EMS systems they are familiar with so we can flesh out this list a bit more.
