I wound up doing a couple of things to take care of this...
First of all, I think the car had some front end damage at one point and it wasn't pulled out 100%... The car still drives straight with no issues, but I think that's my clearance issue in a nutshell. I went ahead and pulled the motor a bit and dried to straighten that area to no avail... So, what I did instead was to get new bolts for my cross member and push it as far to the left as it would go Before tightening down my rear mount bolts.
I also replaced the fat nut on the power steering pump with a jam nut... That gives me enough space to at least squeeze a belt past and get it installed... tightened all the way with the belt that came with it, I now have about 1/2 an inch of clearance from the pulley. It'll have to be enough for now.
