As above, Dye or Flock.

That paint idea sounds like a PITA, it stinks, you wax it and then it shines in sun in your eyes? No thanks.

The flock can look really good, very clean and OEM. Jimithin7000 amongst others has flocked his dash.

Properly done dye and you cannot tell it was done. Rob (SE-Rican) used dye on some parts in his immaculate (B13 Award Winning) interior. I had no idea and I am a very picky bastard.

Flock is really a cheap way to spruce up a tired dash.

Or if you don't want to deal with the mess that comes with flocking, just have it upholstered. There are lots of simulated suedes out there that are stretchable.
