Depends on where you are drawing your oil pressure from. Obviously you don't know how much pressure is hitting the turbo unless your gauge is after your restrictor. I think most people have their gauges set up on the distribution block, which is fine and gives you a good idea of how healthy your oil pump is, but will only keep you guessing as to what is actually being fed into the turbo.
I would recommend building some cheap inline gauge you can hook up to the oil inlet line to the turbo and see what's happening when the hood is open. The restrictors serve their purpose and do a decent job, in theory the only thing that ever worries me is if the pinhole in the fitting itself were to clog from debris/contaminants in the oil, you can forget about proper oil pressure to the turbo. Then again, if you have junk coming out after the oil filter, you probably have a bad filter or bigger problems.
