Now since you said you dont have access to a tuner or dyno, and you dont plan on going too big Id say you can use your stock SE-R ECU, DET 370 injectors and an AFC, which is very easy to tune...

WTF?

Right! that's what I though...his sig does say London plumber though!?

Ok, since I first posted this originally, I've already done exactly what you just described.
I picked up that style mani w/j-pipe, a t-25, 370cc injectors, and the/a ic got thrown in too. Not sure what the ic is from (I'm new to the SR-20 game) but it looks like a small "behind the wheel well" type affair, like I've seen the stock DSM's use. I'll post a pic of it when I get it and you can educate me. You're right on about my goals too, I don't need "come on like a blowtorch" acceleration, traction is at a premium for me. I figure I can keep this t-25 In the sweet spot but will eventually upgrade this turbo to a gt25r or a gt2860rs at some point, but my next issue is ecm.
You said you think my ecm will handle this config to a certain point right?
What is that point (psi ?) At what point do I have to go AFC or JWT on the ecm?
Additionally I've got a CoolingMist Varicool II (W/digital controller) Meth injection system from my previous turbo setup which has been pretty beasty for me.
The plumbing aspect of this is not a problem for me, if anything, I may get a little too shiney/blingy under the hood you know how that can be, but it screw's with my (racing) buddy's heads too much not to. lol

You will need at least an s-afc for injector correction from the get go. The t-25 is such a small turbo and is hard to stay out of boost with so I'm not sure if you really want to go that route. You may consider larger intercooler piping to slow boost response down a little but they start making boost almost as soon as you hit 2k rpms or so, so traction will be a little tough. I would run an older t3 (oil cooled only) with a log manifold and low boost for your application but you can try to run a intentional boost leak or only run 5 psi but I believe you have a 7lb spring so you will have to do something about that. You will also not have power above 6200 till redline with a t25.

what I said is that you can handle good with stock ECU and afc, the afc is needed (or any kind of piggy) to control your injectors... I said AFC because its cheap and really easy to tune using a wideband...
the problem is not boost, the limitant of the AFC is injectors, with stock ECU you can tune very good the 370 injectors, but if you switch to 550cc injectors youll need something else, afc will be hard pushed on the tunning with the stock ECU...

for a T25 the 370 injectors will be just fine...
I made 283whp/264tq with gti-r T28 and manny with the 370injectors, stock se-r ecu and neo afc @ 13.5psi, and S4 cams...
