You don't have to water cool any ballbearing turbos if you don't want to. The water is there to prevent oil coking after shutdown which you can do by driving the last 1/2 mile slowly or letting the car idle for a short while before shutdown (or use a turbo timer).

Air cooled Porsche guys go without water all the time.
