Oil temp usually staggers behind water temp, and is slower to react so if it gets up to 240-250 I usually slow down so it is useful. If I were you though I'd be all about an NX radiator and a wideband rather than an oil temp gauge.

Yeah in my car I have an Autometer boost gauge/vac, mech oil press, and water temp. Then I have an AEM boost controler/gauges and a AEM wide band. With these gauges Ive been able to solve 100% of the little problems that pop up with a turbo car before I even popped the hood...from boost leaks to rad fans not coming on to vacuum hoses that popped off.
While I agree you might not NEED the gauges. Having them will save you alot of time. Also like Benitto already said. Checking them takes a split second once your used to where they should be. You feel the car doesnt feel right? Check your gauges and reasure yourself easily and quicky.
Also yeah pressure goes DOWN when the oil heats up lol. I can understand where you would think it would go up though...sorry I didnt clarify. I remember when I first got into cars I thought the oil press gauge would be throttle possition dependant like a boost gauge instead of RPM dependant
