It's not going to be the struts that are the issue. The issue will be the upper spring mount and bearing. The spring mount used for a stockish spring (read: wide diameter) is supported against the underside of the strut tower. When using camber plates, the spring is usually supported using a cone shaped spacer riding on the sperical bearing within the plate. That's to allow space to adjust the top of the strut...ie. the whole point of the plates. I would think something would have to be rigged or fabbed to make it work.
...which in the end, going with coilovers is easier.
Your other option is to slot the lower bolts...but thats not as easy as it sounds... to do it right. Then the issue of slipping comes into play.
