On the street, it'll be fairly noticable. Uncontrolled bouncing, unusual grinding or scraping noises coming from the dampers, extraneous scratching and/or blueing on the piston rods are all signs of wear.
If you just want to see if your dampers are completely dead, turn all four to full soft and bounce one corner at a time. All of them should come back to rest and settle within one bounce. if any of them don't, those dampers are most likely completely done.
