I can just use the thermostat out of the old motor, it is fairly new (10000 miles or so) and was working perfectly fine when I took it out. If I do end up needing it though I will call you.

I use to have a setup similar to yours Robchaos minus the PP head. I managed to run 13.9@98 on street tires no dyno with the final setup but I think I was betwen 170-175 whp
because when the engine was with stock pistons I got 160 whp without tunning
So good luck ...
