I always thought that as long as you went with the right tire size to match the overal diameter of a stock wheel/tire combo you wouldn't have many changes other than differences in overal weight of the wheel/tire combo and where the weight was on the wheel/tire combo..

That is only one aspect. The tire width affects it. The wheel weight and tire weight combo affects dynamics. The sidewall affects dynamics.
