Sounds like my exact problem. Hmm. I plan on flushing the system this weekend anyway, so I'll change the t-stat while I'm in there. Thanks for the help guys.

Changed the thermostat and drained and filled the system. Gauge is still reading low. I'll change the sensor tomorrow and see if that changes anything.

Bump from the dead. Just thought I would update this, in case anyone else runs into this problem. Apparently when the JDM motor was swapped into my car, the swapper left the JDM sensors on it. Not sure if that caused any issues, but I swapped the temp sensor for the gauge with the one on the old US motor and the gauge works fine now.
