Rockauto has a 180 F thermostat - STANT #13968.
I was ordering parts for my brother's pontiac, and got the 180 tstat to try on
my daily driver B13 w/bolt-ons & koyo radiator.
It was only $8.56, but you get what you pay for - the Stant is very cheap
quality, nothing close to OEM.
*EDIT - I don't expect it to last - I recommend getting an OEM tsat*
It doesn't open until 185 F, and doesn't open fully until 190 F or so, according
to the ECU temp sensor (ecutalk display).
Under full acceleration, it opens fully and the temp drops to 160 or so.

With an OEM 170 F tstat, even in 0 F ambient temps, it runs at 170 F.
I don't let it warm up either, just get in and drive it light load until warm.

If you're only getting to 156 or so, I'd guess the tstat is worn out or not
functioning properly, or some other issue. BORNGEARHEAD's NX w/VE & koyo
did the same thing until he got the corrent bin file loaded on his calum ecu.
It was running very very rich and it wouldn't reach normal operating temps.
